APPLE CAKE

INGREDIENTS

3 cups flour
1 tsp soda
1 tsp salt
1 tsp cinnamon
1 cup oil
3 cups fresh apples, peeled and diced
1 tsp vanilla
1 cup walnuts or pecans, chopped
2 eggs
2 cups sugar

METHOD

1. Sift the flour, soda, salt and cinnamon together. Add the oil and vanilla.

2. Beat eggs and add the sugar a little at a time to the egg mixture. Beat until thick. Mix the egg mixture to the flour and oil mixture. Mix well. Add the apples and nuts.

3. Bake at 350°F in a greased pan for 1 hour
and 15 minutes.

4. Allow to cool about 20 minutes on a rack before removing from pan.
