INGREDIENTS
2 x 227g packs strawberries, hulled and halved or quartered if
large
3 tbsp Pernod
3 tbsp icing sugar plus more to taste, if wished
1 x 2S0g tub fromage frais
Mint or basil sprigs to decorate (optional)
Sweet biscuits to serve

METHOD
Pernod has a distinct aniseed taste which gives fresh strawberries
a delicious twist.
1. Mix the strawberries with the Pernod and icing sugar and leave
to marinate for up to 1 hr. Strain the resulting liquid from the
fruit and mix with the fromage frais and sufficient sugar to sweeten
to your taste.
2. Spoon the strawberries into serving glasses and top with the
fromage frais. Chill until ready to serve. Just before serving,
decorate the desserts with a sprig of mint or basil, if wished.
Serve with sweet biscuits.
