INGREDIENTS
200g
Margarine 8oz
225g Demerara Sugar 9oz
225g Coconut 9oz
75g Plain Flour 3oz
75g Sultanas 3oz
120ml Apple & Blackcurrant Juice 8tbsp.

METHOD
1. In a bowl mix together the sultanas and juice, and leave for
at least 1 hour, to allow the fruit to absorb the juices.
2. Melt the margarine in a saucepan, once melted remove from the
heat, and add sugar, coconut, and flour, mixing well. Drain the
sultanas, and add to the mixture.
3. Pour into a pre-greased oblong tin (approx. 11" x 7"
/ 27cm x 18cm), and bake until golden in colour.
4. Once cooked, allow to cool completely, before removing from the
tin. When the mixture is set, and firm to touch, remove from the
tin, and cut into slices.
