Chargrilled Langoustine

SERVES 4


INGREDIENTS

1 tbsp Olive Oil
20 Fresh Langoustine
2 Garlic Cloves, crushed
1 Onion, chopped
1 Green Chilli, deseeded and finely chopped
Salt and Black Pepper
25g/1oz Fresh Coriander, chopped
2 Limes, quartered

METHOD

1. Heat the oil on a large griddle or frying pan until very hot.
 
2. Add the langoustine to the pan and fry stirring for 2 minutes.
 
3. Add the remaining ingredients, including the quartered limes and season with salt and pepper.
 
4. Continue to cook, stirring until the langoustines begin to colour.
 
5. To serve - transfer the contents of the pan to a warmed serving platter and serve immediately with a chili mayonnaise
