Duck Salad
Serves 4


INGREDIENTS

4 x 150g barbary duck breast fillets
3 x 15ml spoons shoyu or soy sauce
2 green chillies, de-seeded and finely chopped
2.5cm piece of fresh root ginger, peeled and grated
juice of 1 orange
1 garlic clove, crushed
mixed green salad leaves

METHOD
  
1. Place the duck fillets in a shallow dish. Mix together the marinade ingredients and spoon over the duck.

2. Cover and marinate in the refrigerator for 12 hours, turning them occasionally.

3. Preheat the grill to high and grill the breasts for 4-5 minutes each side. Remove and discard the skin from the breasts and serve, either whole or cut in strips, on a bed of green salad.
