Curried Turkey and Avocado
Serves 4


INGREDIENTS

375g cooked turkey, cut into strips
1û2 bunch salad onions, chopped
1û2 red pepper, de-seeded and chopped
1 avocado, chopped
150ml mayonnaise
2 x 5ml spoons lemon juice
15ml spoon freshly chopped coriander
1-2 x 5ml spoons mild curry powder
5ml spoon cumin
5ml spoon garam masala
salt and freshly ground black pepper
fresh coriander, to garnish
shredded lettuce, to serve

METHOD
  
Place all the ingredients in a bowl and mix thoroughly.

Arrange the shredded lettuce on a serving plate, spoon the curried turkey over the top and garnish with the coriander.
