Chicken Kievs

INGREDIENTS

4 large skinless chicken breasts
1 pack garlic & herb boursin cheese
4 cloves garlic
2 slices good ham
2oz butter
1 lge egg
breadcrumbs
flour
salt & pepper
mixed herbs

This is something that i have made up after not being able to buy good quality chicken kievs at a reasonable price.

It is best to wrap the cheese mixture in the ham as it helps to stop it from leaking out when cooking.

The ham could of course be omitted but a good seal on the chicken would be essential.

METHOD
  
1. Open a pocket in each of the chicken breasts

2. Crush the garlic cloves and combine with the butter and the boursin cheese.

3. Cut each slice of ham into two and using a quarter of the cheese mixture spread onto each piece of ham.

4. Roll each piece of ham with the cheese mixture to fit into the pocket of the chicken breast and close the chicken to reform it back into shape.

5. Dip each breast into the flour seasoned with the salt and pepper.

6. Then, dip into the egg which should be beaten.

7. Dip the breasts into the breadcrumbs which have been combined with the mixeed herbs.

8. refrigerate for 30 minutes.

9. Deep fry for approx 10 to 15 minutes or until golden brown
