Pan-fried Lamb with Parmesan
Serves 4

INGREDIENTS

1 tbsp Olive Oil
25g / 1oz Butter
Half a teasp Sugar
2 Onions, chopped
8 Lamb Chops
50g / 2oz Streaky Bacon, chopped
25g / 1oz Fresh parmesan, grated
1 tbsp Fresh Parsley, chopped

METHOD

1. Heat half the oil with the butter in a saucepan. Add the sugar and onions and cook over a gentle heat for 10 minutes. Add the bacon and continue to cook for a further 15 minutes stirring occasionally, until lightly golden.
 
2. Meanwhile heat the remaining oil in a frying pan, add the chops and cook for 8-10 minutes each side.
 
3. To serve - Transfer the chops to a warmed serving platter and spoon over the onion and bacon mixture, sprinkle with the parmesan and parsley and serve immediately.
