Fennel and Tomato Salad
Serves 4

INGREDIENTS

1 large bulb of Fennel
1 Onion
4 Tomatoes
2 tbsp Oil
1 tbsp Wine Vinegar
Salt and Pepper

 

METHOD
 
1. Wash and trim the fennel and cut into thin slices. Blanch in boiling salted water for 5 minutes. Drain.
 
2. Peel the onion and slice into thin rings. Slice the tomatoes then arrange the fennel, onion slices and tomato slices in a salad bowl.
 
3. In another bowl, mix the rest of the ingredients together then pour over the salad. Chill for 15 minutes before serving.
