Poached salmon with cucumber salad
Serves 4

INGREDIENTS

4 pieces salmon fillet
1 tbsp salt
1 cucumber, thinly sliced
8 shallots, thinly sliced
100g caster sugar
4 tbsp white wine vinegar
Freshly ground black pepper
New potatoes and sugar snap peas or mangetout to serve

 

METHOD

1.Place the salmon in a wide shallow pan and just cover with cold water. Add 1 tsp salt and bring slowly to a simmer. Cook for 1 min, then remove from the heat and leave to go cold in the water.

2. Mix together the cucumber, shallots, sugar, vinegar , remaining salt and pepper . Leave to one side at room temperature for at least 1 hr.

3 When the salmon is cold, drain carefully and remove the skin, if wished. Drain the salad and serve with the salmon, new potatoes, sugar snap peas or mangetout.
