Hot New Potato Salad with Trout
Serves 4

INGREDIENTS

700g (1lb 9oz) baby new potatoes
2 fresh trout
100g (3 1/2 oz) green beans
4 spring onions
1 green apple
200ml tub of creme fraiche
1 lemon

 

METHOD

1. Take 700g (1lb 9oz) of baby new potatoes. Boil for 10-15 minutes until tender, drain.

2. Place 2 fresh trout on buttered foil. Grill for 7-8 minutes each sidecool slightly, skin and break into large flakes.

3. Part boil for 2-3 minutes 100g (3 1/2 oz) green beans, cut into 1 inch pieces, drain. Finely chop 4 spring onions and 1 green apple. Toss in lemon juice.

4. In a large bowl mix the hot potatoes with 1 x 200ml tub of creme fraiche. Add the onion, apple and beans. Season. Add the flakes of trout.
