Pear and Goat's Cheese Salad
Serves 4

INGREDIENTS

Mixed Continental Lettuce Leaves
4 tbsp Lemon Juice
6 tbsp Olive Oil
4 Ripe Pears, cored and cut into chunks
100g/4oz Walnuts, coarsely chopped
225g/8oz Goat's Cheese

 

METHOD

 1. Cut the cheese into 4 equal rounds or portions. Arrange the mixed lettuce on individual plates.
 
2. In a large bowl, blend together the lemon juice and olive oil. Add the
watercress, pears and walnuts and toss well. Arrange on top of the lettuce then top with the goat's cheese.
