INGREDIENTS
25g / 1oz Butter
1 Large Onion, chopped
1 tbsp Fresh Parsley, chopped
15g / 0.5 oz Plain Flour
150ml / 5 fl.oz. Milk
225g / 8oz Mixed Nuts, chopped
1 teasp tabasco sauce
1 tbsp Tomato Puree
175g / 6oz Fresh Breadcrumbs
1 Egg, beaten

METHOD
1. Melt the butter in a pan, add the onion and parsley and fry gently
until soft. Sprinkle over the flour and cook, stirring, for 1-2
minutes.
2. Gradually add the milk, little by little, stirring all the time.
Continue to cook until the sauce thickens. Add the remaining ingredients
and mix well. Cool slightly.
3. Preheat the grill to high. Divide the mixture into 8 portions,
and with floured hands form each portion into a ball, then flatten
with the palm of your hand to form burgers.
4. Place under the grill and cook for 4 minutes on each side. Serve
hot.
