Quorn with Black Beans
Serves 4


INGREDIENTS

2 tbsp Vegetable Oil
1 Small red Onion, sliced
1 Red Capsicum, deseeded and sliced
1 Garlic Clove, crushed
300g / 11oz Quorn Pieces
6 Spring Onions, cut into lengths

For the Sauce
2 tbsp Black Bean Sauce
1 tbsp Dry Sherry
1 teasp Sugar
1 teasp Cornflour
8 tbsp Water

METHOD

1. Heat the oil in a large frying pan until very hot, add the red onion, and pepper and stir fry for 1 minute, then add the garlic and Quorn pieces and cook for a further 3-4 minutes until the Quorn pieces have taken a light golden colour.
 
2. Add the spring onions and cook for a further 1 minute then add the sauce ingredients, allow it to come to the boil and thicken slightly. Serve immediately.
