Tofu with Satay Sauce and Noodles
Serves 4


INGREDIENTS

3 level tbsp Caster Sugar
1 Red Chilli, deseeded and finely chopped
210ml / 7fl.oz. Water
75g / 3oz Plums, stoned and diced
1 teasp Sesame Oil
150g / 5oz Marinated Tofu pieces
300g / 11oz Satay Sauce
300g / 11oz Soba Noodles, cooked
2 teasp Fish Sauce
1 tbsp Freshly chopped Chives to garnish
4 Spring Onions, thinly sliced on the diagonal to garnis

METHOD

1. Place the caster sugar, chili and water in a medium sized saucepan and heat
 
2. Add the plums and cook for approximately 8 minutes over a medium heat,
 
3. In another large pan, heat the sesame oil over a moderate heat, add the tofu, and seal on all sides.
 
4. Add the plum mixture to the tofu and cook for a further minute.
 
5. Add the satay sauce and bring to the boil. Remove from the heat.
 
6. Add the noodles and fish sauce and continue to cook, stirring. until heated through.
 
7. To serve - transfer to a heated serving platter and garnish with the chives and spring onions. Serve immediately.
